Recently as I was strolling around Market District (Childless, alone with my own thoughts) I came across Fresh Almond Butter. I just so happen to LOVE almonds much more than peanuts and they just so happen to be a wonderful healthy fat. So I looked for the cheapest tub they had and for $2 I walked away with some Almond Butter which has recently become a legal addictive stimulus in my life.
I recently started a new eating life style “clean eating.” The rules are pretty simple and sometimes but not always easy to follow.
1. No Sugar!
2. No White Flour!
3. No fried foods
4. If you can’t pronounce the ingredients its not clean don’t eat it!
5. Eat 5/6 meals a day…
6. DON’T skip breakfast
And that’s really about it!
Ok so at first I thought… what no sugar? No fish fry (as it is lent), eat 5/6 times a day what are you crazy?
And the hardest one for me is to eat breakfast as I am a HUGE fan of skipping all solids and drinking a liquid diet of coffee!
Anyway more about EC later… back to Almond Butter… Almond butter is 5.99 a pound! It’s crazy the cost to eat healthy… so what is a girl who is on a cash only budget to do? Make my own of course. I raided the pantry and grabbed our unsalted almonds, roasted them and went to town… I have been enjoying daily the glorious richness of my own almond butter! Best part is besides the taste is the pride that comes from being able to provide this nutritious substance for my family.
Almond Butter Recipe
5/6 oz of unsalted raw almonds
Roast in oven at 350 for 10/15 minutes
Add to food processor and let that baby run… scrap down the sides here and there…
½ teaspoon of EVOO
(save some chunks from the first stage of processing to make chunky almond butter)
Enjoy the creamy splendor!
