Its been a while since I have posted... and this post will be short. The mini's had me running today on top of my house that blew up on itself.
Justin and I have been working hard at trying to eat healthy. We tend to eat the same meal a few times a week... we are a family of leftovers for sure! I really do enjoy cooking... baking eh not so much! But cooking let me at it.
Tonight I made a new recipe that I adapted from The Gracious Pantry website. A blog I follow on my Eating Clean Journey. She has some awesome recipes. Tonight's dinner was Pineapple Chicken on the grill! YUM!
Here's the low down.
2 thin breasts of chicken cubed.
2 tbsp of onion powder
1 tbsp of garlic powder
1/2 tsp of pepper
and a handful of fresh cilantro (mine came from my herb garden... LOVE)
Toss cubed chicken in the above ingredients... Place on a skewer (make sure to soak your skewer in water for a while before cooking)
Our sides were pineapple and green peppers (both cut in chunks and placed on skewers and grilled)
Oh and who can forget the healthy brown rice on the side.
Check out the picture my handsome husband snapped for me... try this recipe you will be pleased. The spices made a crisp outer layer... so much so that Justin thought I used bread crumbs. Nope not here!
